White Christmas Pale Ale Brew Session

Me and my good friend Steve decided to have a brew session on Christmas day, Saturday, December 25, 2010. He and Lori were staying in town and so was our family so we decided to get together and enjoy a great Christmas day.

I worked up a 10.5 gallon post boil recipe that is a slight modification of a Sierra Nevada Pale Ale (SNPA) clone.

Grain Bill:
20 # 2-row pale malt
1 # 60L
1 oz Carapils (that was all I had, oh well)

Hops:
1 oz Chinook pellets 12% AA at 60 mins.
1 oz Centinnel pellets 8% AA at 5 mins.
2 oz Cascade pellets 7% AA at 1 min.

Yeast: Safale US-05

Mashed in at 148 degrees F but brought the temp up to 154 degrees quickly. The sparge ran fast but all said and done, we ended up with SG=1.055, a little higher than the expected 1.052, despite having added only 1 oz of Carapils. My recipe called for 8 oz and I had not realized I did not have it in stock. Cooling the wort went really well with the Therminator because of cold ground water.

UPDATE: Saturday, January 8, 2011: Began cold crashing at around 35 degrees F.

UPDATE: Sunday, January 23, 2011: We kegged the brew today. Tasted great; color very similar to SNPA. Did not get the aroma hops that we wanted. But still a very good beer.
